Healthy Chicken Fried Rice
Nick and I are no strangers to Chinese take-out, but since we are trying to eat better we have not been ordering it lately. However, I have had a craving for it this week. So, I decided to make one of my favorite dishes and give it a nutritious spin.
This chicken fried rice dinner was awesome and both my misters cleaned their plates!
Here is what you will need:
3 cups cooked brown rice (1 cup uncooked)
about 1 pound cooked chicken breast, diced into small bite size pieces
2 tablespoons cooking oil (sesame, grape seed, or vegetable)
2 cups frozen mixed vegetable (I used a mix with green beans, peas, carrots, and edamame)
2 yellow onions, diced
4 cloves of garlic, minced
2 eggs, beaten
4 tablespoons soy sauce
optional: 1/2 cup roasted sesame seeds
Here is what to do:
Heat 2 tablespoons of oil in a large frying pan on medium high heat. I used half grape seed and half sesame seed. Sesame seed oil really does add a yummy taste. I highly recommend it. Add mixed vegetables and cook for a few minutes until thawed. Then, add the onion and garlic and cook until tender. Push the mixture to one side and lower the heat to medium low. Poor in eggs to the empty side and scramble.
Lastly add rice, chicken, roasted sesame seeds and soy sauce and blend all together.
This was so good and easy! It also could be easily modified with different proteins or different vegetables. I served it with a Thai cucumber salad and it was an excellent meal. It fulfilled my craving in a nutritious way!
